BARBEQUE COOKED PIZZA
Barbecue pizza is not just a fad or as someone thinks, and nobody has the illusion of replacing a real wood-burning oven for pizza, but you can get really excellent results, with uniform cooking and much better than what can be obtained in the normal home oven.

In order to make an excellent barbecue pizza you need to have three elements:
- the pizza stone
- a barbecue with a lid, whether it’s gas or charcoal, it doesn’t matter
- the recipe for a good pizza

INGREDIENTS:
Pizza dough
Peeled San Marzano (Cirio – La Torrente – Mutti)
Fresh buffalo mozzarella
Salt
Extra virgin olive oil
Origan
PREPARATION:
Light the barbeque and bring it to 650°F.

Take the peeled tomatoes, pour them into a jar, add the salt and blend them with an immersion blender ①, being careful not to liquefy the tomatoes too much.
Add 2 tablespoon of extravergin oliv oil ②, oregano ③, and mix them with a spoon.

Take a buffalo mozzarella and break it into a colander,or use a kitchen paper, to ensure that it loses a little water.

Take the dough and after putting a little semolina on the work surface, roll it out so that it has taken the desired shape.
Spread the tomato, add the mozzarella, and bake in the barbeque which must be at 650.
Keep the barbeque closed for at least 3 minutes (very important), after which you can check the pizza and verify the cooking point.
Take it out and serve it.
