BAKED POTATOES
Baked potatoes are a classic side dish of Italian cuisine based on very few ingredients: potatoes, oil, salt, garlic, rosemary or spices. Perfect to accompany roasts and main courses of all kinds.

Important is to cut them all the same. This will favor uniform cooking whether they are cubes, wedges or sticks.
Remember that depending on the thickness, the cooking time may vary.

INGREDIENTS: for 4 people
700g. Yellow potatoes.
6 Tablespoons of extra virgin olive oil.
2 Cloves of garlic.
Fresh rosemary (alternatively dried)
2 Cofee spoons of salt.
PREPARATION:
First, heat the oven to 230°C – 450°F.
Take the potatoes and peel and cut them into wedges ①. Collect the potato pieces in a bowl ②, cover them with cold water and leave them to soak for 15 – 25 minutes ③ otherwise they will blacken in contact with oxygen.

This will cause part of the starch to be lost, and it is also useful when you want to peel and slice the potatoes in advance and you cannot cook them immediately, in addition to the fact that in this way there will be no risk of them sticking during cooking.
Drain the potatoes and dry them well by dabbing them with a clean cloth or absorbent kitchen paper ④.

Put the potatoes in a non-stick pan where you have put the rosemary, garlic and salt ⑤ oil, and mix with your hands, so that all the potatoes are perfectly flavored with the aromas ⑥.

Bake in the middle part of the oven ⑦ for around 50/60 minutes, turning them every 20 minutes ⑧ around, to ensure that they brown on all sides.

Finally, after 50/60 minutes, open again, move the potatoes, turn on the grill at 500°F and finish cooking for another 5 minutes until the baked potatoes are crunchy, golden brown and with a toasted crust ⑨.

Remove the pan and move the potatoes onto a serving plate with absorbent paper, to remove any oil residues, and salt generously.

Crispy Baked Potatoes are ready.
